Having worked in the food dist...Very Good Article!<br /><br />Having worked in the food distribution industry for nearly twenty five years I can attest that the following statement has never been more important:<br /><br />"Food and commodity prices are driven by basic supply and demand and tend to be inelastic – once they rise, they are slow to fall below the increased level. This means that prices continue to go up, driving up operating costs."<br /><br />Prices for commodities have always had volatility but today's new highs are likely to become next year's lows. Long gone are the days that restaurants could ride out the wave. What is most important is that restaurant owners need to understand the impact on menu items and profitability.
